Impossible Pie

 
This is a quick and easy egg and bacon pie. It doesn’t need any pastry, which makes life simple. I think it came from the West Australian Sunday Times newspaper, a long time ago.
 

Ingredients

 

4 eggs
2 cups, 500 ml, milk
½ cup, 125ml plain flour
1/2 teaspoon baking powder
Pinch salt
75g margarine
200g bacon, chopped into pieces
½ cup 125ml grated cheese
¼ cup, 70ml, parsley chopped

 

Method

 
Beat the wet ingredients (except the Margarine) together. Mix the dry ingredients. Add the margarine to the wet ingredients, and then mix the dry and wet together. Pour into a 23cm pie dish, and cook at 180 deg C for 35-40 minutes.
